Calypso Kabobs Recipe
Ingredients
| Lamb shoulder | 1 pound, diced | |
| Peach | 1 Can (10oz) | |
| 4 medium bananas, cut in 1-inch slices | ||
| Pitted dates package | 1 | |
| 24 red marschino cherries (about 1/2 cup) | ||
| Butter/Margarine | 2 Tablespoon, melted | |
| Lemon juice | 1 Tablespoon | |
| Cinnamon | 1 Teaspoon | |
| Cloves | 1/4 Teaspoon | |
Directions
MAKING
1)On skewers, thread in the lamb pieces.
2)Remove peaches from can, and save the syrup.
3)Dip and coat the banana slices with syrup.
4)Thread a peach half, 3 dates, 3 banana slices and 3 cherries on each of the 8 skewers.
5)In a bowl, make the basting sauce by mixing melted butter or margarine, lemon juice, cinnamon and cloves.
6)Place the lamb skewers over the grill about 3 to 4 inches from the source of heat.
7)Grill for 5 to 7 minutes, turn often.
8)Now, place the fruit skewers and brush with basting sauce.
9)Grill for 5 to 7 minutes longer, basting with sauce often. Turn the skewers once.
SERVING
10)Remove both the meat and fruit skewers from the grill.
11)Place them on a entrée tray and serve hot.
