Ingredients

 Vegetable oil2 Teaspoon
 Onion1/2 Cup (16 tbs), chopped
 Carrot1/2 Cup (16 tbs), thinly sliced
 Red bell pepper1/2 Cup (16 tbs), chopped
 Garlic2 Clove (5gm), minced
 Curry powder2 Teaspoon
 1 teaspoon chili paste with garlic
 1/2 teaspoon peeled, grated fresh ginger root
 Kale6 Cup (16 tbs)
 Cooked brown rice2 Cup (16 tbs)
 1 cup cooked quinoa
 Cilantro2 Tablespoon, minced
 Soy sauce1 Tablespoon
 Garbanzo beans1 Can (10oz), drained

Directions

Heat oil in a large non stick skillet over medium heat until hot.
Add onion, carrot, bell pepper, and garlic; saute 2 minutes.
Add curry, chili paste, and ginger root; saute 1 minute.
Add kale and remaining ingredients; cook 3 minutes or until thoroughly heated, stirring occasionally.
