Kaju Saathe Khichdi Pulao Recipe
Ingredients
500 gms. basmati rice
1/2 teaspoon turmeric powder
1/2 cup onion slices, deep fried golden brown
2 whole pieces of cinnamon
4 cloves
2 cardamoms coarsely beaten
2 kala elchas
2 whole badiyaan
2 javantri flowers
10 black peppercorns
2 coconuts, milk removed
2 capsicums thinly sliced
1/4 cup raisins
5 green chillies ground
1/4 cup whole cashewnuts
1/2 cup green peas, boiled
1/2 cup french beans and carrots, boiled, use pure ghee if possible otherwise use oomda or dalda
How to make Kaju Saathe Khichdi Pulao
1. Wash the rice well. Heat the fried onions in a little ghee and add the whole spices, turmeric, salt, little water and bring to a quick boil. Add the rice. Immediately keep on simmer and when rice is half cooked add the milk of 2 coconuts and the ground green chillies. Add the milk carefully  a little at a time till the rice cannot absorb more. Cook covered over a very low flame till tender. Taste for salt. This rice is best made in an electric rice cooker as the grains do not stick.2. Heat 1/2 cup pure ghee and lightly fry the capsicum strips, raisins and cashewnuts. Set aside. Add the boiled vegetables to the same pan and holding the pan with both hands swirl them around and gently mix into the cooked rice.
3. Decorate the khichdi with; fried capsicum, raisins and cashewnuts.
