Ingredients
Red pumpkin (kaddu)- 2 cups, chopped
Onions - 1/4 cup, finely chopped
Cumin seeds (jeera)- 1/2 tsp
Fennel (saunf)- 1/2 tsp
Nigella (kalonji)- 1/4 tsp
Fenugreek (methi)- A pinch
Asafoetida (hing)- A pinch
Turmeric powder (haldi)- 1/4 tsp
Chili powder - 1 tsp
Amchur (dry mango powder)- 1 1/2 tsp
Oil - 1 tbsp
Salt - to taste
FOR THE GARNISH
Coriander - 2 tbsp chopped
Directions
MAKING
1 In a pressure cooker, heat the oil.
2 Add the cumin seeds, fennel seeds, nigella seeds and fenugreek seeds.
3 When the seeds crackle, add the onions and sauté till they turn translucent.
4 Add the pumpkin, asafoetida, turmeric powder, chili powder and salt with 1/2 cup of water.
5 Pressure cook for 2 to 3 whistles so that the pumpkin becomes mushy.
6 Add the amchur and salt, mix well.
7 Simmer gently till the oil separates from the pumpkin.
SERVING
8 Serve hot, garnished with coriander.
