Kaddu Ka Bharta Recipe

I have a recipe which is very near and dear to my heart and that is of Kaddu Ka Bharta. Pamper everyone with Kaddu Ka Bharta as Side Dish. Whenever I have Indian friends visiting, I always prepare Kaddu Ka Bharta which is the most savored dish of their cuisine. Am sure you have had a lot of recipes passed on to you by aunts, mom, grandparents, friends, etc. It is time you pay them back by making and then sharing this wonderful Kaddu Ka Bharta.

Ingredients

 
Red pumpkin (kaddu)- 2 cups, chopped
 
Onions - 1/4 cup, finely chopped
 
Cumin seeds (jeera)- 1/2 tsp
 
Fennel (saunf)- 1/2 tsp
 
Nigella (kalonji)- 1/4 tsp
 
Fenugreek (methi)- A pinch
 
Asafoetida (hing)- A pinch
 
Turmeric powder (haldi)- 1/4 tsp
 
Chili powder - 1 tsp
 
Amchur (dry mango powder)- 1 1/2 tsp
 
Oil - 1 tbsp
 
Salt - to taste
 
FOR THE GARNISH
 
Coriander - 2 tbsp chopped

Directions

MAKING
1 In a pressure cooker, heat the oil.
2 Add the cumin seeds, fennel seeds, nigella seeds and fenugreek seeds.
3 When the seeds crackle, add the onions and sauté till they turn translucent.
4 Add the pumpkin, asafoetida, turmeric powder, chili powder and salt with 1/2 cup of water.
5 Pressure cook for 2 to 3 whistles so that the pumpkin becomes mushy.
6 Add the amchur and salt, mix well.
7 Simmer gently till the oil separates from the pumpkin.

SERVING
8 Serve hot, garnished with coriander.
