Kaddu Ka Pudding Recipe
Ingredients
| Rice flour | 1 Cup (16 tbs) | |
| Jaggery | 1 Cup (16 tbs), grated | |
| Soda bicarbonate | 1/2 Teaspoon | |
| Ghee | 1 Tablespoon | |
| Coconut | 1 Cup (16 tbs), grated | |
| 2 cups grated red pumpkin | ||
| Cardamom powder | 1 Teaspoon | |
| Salt | 1/2 Teaspoon | |
Directions
Melt jaggery and mix the flour, the pumpkin, coconut, soda bicarbonate and the cardamom powder.
Add a little water to make a thick mass.
Grease a suitable mould with ghee and pour in the mixture.
Cover and steam for 1 hour, or till done, in a traditional idli steamer.
Remove, cut into slices and serve warm with dollops of white butter.
