Ingredients

 
1/2 cup butter or shortening 125 mL
 
1 cup granulated sugar 250 mL
 
1/2 cup smooth peanut butter 125 mL
 
1 egg
 
1-3/4 cups all purpose flour 425 mL
 
1/2 tsp baking powder 2 mL
 
1/4 tsp salt 1 mL

Directions

In bowl, beat together butter, sugar and peanut butter until smooth; beat in egg, beating well.
Mix together flour, baking powder and salt; gradually stir into creamed mixture until smooth dough forms.
Gather dough into ball; divide in half.
Place each half on sheet of waxed paper; using paper, shape dough into logs, each about 2 inches (5 cm) in diameter.
Wrap paper around logs; chill in refrigerator for at least 4 hours or until firm. (Dough can be refrigerated for up to 1 week or overwrapped and frozen for up to 6 weeks; thaw before baking.)
Slice dough into 1/4 inch (5 mm) thick slices; place on lightly greased baking sheets.
Decorate as desired.
Bake in 350°F (180°C) oven for 12 minutes or until firm to the touch and lightly browned.
Remove to rack and let cool. (Cookies can be stored in airtight containers for up to 1 week.)
