Jumbo Shrimp In Piquant Dressing Recipe
Ingredients
| About 6 lb jumbo shrimp, in their shells | ||
| 1/2 onion, very finely chopped | ||
| Olive oil | 6 Tablespoon (DRESSING) | |
| White wine | 3 Tablespoon (DRESSING) | |
| Dash of Tabasco sauce | ||
| Juice of lemon | ||
| Parsley | 1 Tablespoon, finely chopped (DRESSING) | |
| Salt | To Taste | |
| Pepper | To Taste | |
Directions
Half fill a very large saucepan with water and bring to a boil.
Put half the shrimp into the boiling water and cook for 3-4 minutes.
Using a slotted spoon, scoop the shrimp out of the water.
Let the water boil again, then put the remaining shrimp in and cook for 3-4 minutes.
Drain these.
Allow the shrimp to cool slightly, then when cool enough to handle, peel them.
Put the ingredients for the dressing, except the parsley, into a saucepan and bring to simmering point.
Simmer for about 5 minutes.
Pour the dressing over the peeled shrimp.
Mix well together, then mix in the parsley.
Put in a serving dish and keep cool until you are ready to serve.
