Jumbo Raisin Nut Cookies Recipe
Ingredients
2 cup seedless raisins
1 cup water
1 tsp. soda
1 cup shortening
2 cup white sugar
1 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. allspice
3 eggs
1 tsp. vanilla
4 cup flour
2 tsp. salt
1 tsp. baking powder
1 cup chopped nuts
Directions
Boil raisins in water for 5 minutes, drain.
Measure 1/2 cup of the liquid, cool and add soda.
Add vanilla and raisin liquid to shortening, sugar and eggs.
Add dry ingredients.
Chill dough till firm.
Drop by rounded spoonfuls on greased cookie sheet.
Bake at 375° for 12-15 minutes.
