Ingredients

 1 head cauliflower, broken into flowerets (or can use zucchini or artichoke hearts)
 1 egg, well-beaten
 Salt1/2 Tablespoon
 Unbleached flour1/4 Cup (16 tbs)
 Water1/4 Cup (16 tbs)

Directions

Pour 1 inch of olive oil into a small, deep iron pan.
Stir remaining ingredients except cauliflower together; coat the flowerets in the batter.
Fry cauliflowerets a few at a time, for a few minutes in hot oil; drain thoroughly on paper towels.
Keep cooked vegetables on a warm platter in oven until serving time. (This dish can be made ahead. Reheat before serving for about 10 minutes in a 400° oven.)
