Jolly Clown Cake Recipe

Ingredients
1 recipe for Italian Sponge Cake
1 1/2 recipes for Basic White Frosting
4 Strawberry
Almond Cookies, other round cookies may be substituted
Date sugar
Coconut Sugar
About 1/4 cup milk carob chips
A few drops natural red food coloring
Directions
Use 1 9-inch round layer cake pan and 1 9-inch square layer cake pan to bake Italian Sponge Cake according to recipe directions, except decrease baking time to 35 to 45 minutes.
Cool layers on wire racks.
Cut a triangle from the square layer as shown in illustration.
This will be the clown's hat.
The round layer will be his head; trim top to make a straight edge.
From scraps, cut a round pom-pom for top of hat and a neck for clown's head.
Cut 2 small half-rounds to be clown's ears.
Cover a board or tray with brightly colored foil to hold clown cake.
Assemble parts and paste together with a little of the frosting.Let cake dry for an hour or so before frosting.
Brush off crumbs.
Frost entire clown's face and hat.
Place 1 cookie on pom-pom, use 2 cookies for eyes, and carefully cut 1 cookie in half to place on ears.
Sprinkle clown's hat with date sugar and Coconut Sugar.
Make a mouth and nose with carob chips.
Color remaining frosting with food coloring.
Place into a pastry bag, and use a decorative tube to pipe red frosting around cookie on pom-pom, to make a rim for hat, and to make a collar on neck.
Use remaining carob chips to decorate collar and hat rim.
