Johnny Cakes Recipe
I have a recipe which is very near and dear to my heart and that is of johnny cakes. It is a great side dish. Add this johnny cakes to your list of choicest foods and make it whenever you want to.
Ingredients
2 cups cornmeal
1 teaspoon salt
2/3 cup boiling water
1 1/4 cups milk
Directions
Place the cornmeal and salt in a bowl, add the boiling water, then blend in the milk and mix to a stiff batter.
Drop the batter 1 tablespoon at a time into a hot well greased frying pan or griddle and spread it into 3-inch rounds.
Fry the Johnnycakes for 1-2 minutes until the undersides are beginning to brown then turn over and cook the other side until golden brown.
Repeat to use up the remaining batter.
Always serve the Johnny-cakes hot with butter and, if liked, maple syrup.
