John In The Sack Recipe

Ingredients
1 package dry yeast
1/4 cup lukewarm water
3 cups sifted all purpose flour
1 teaspoon salt
1 egg, lightly beaten
3/4 cup lukewarm milk
1/3 cup currants
1/3 cup raisins
1/4 cup chopped candied peel
Directions
Sprinkle the yeast over the water and stir to dissolve.
Place flour and salt in a bowl.
Add beaten egg and lukewarm milk and blend well.
Add currants, raisins and candied peel and mix thoroughly.
Finally, add the yeast mixture and blend well.
Place the dough in an oiled bowl, cover and let rise in a warm place for 45 minutes.
Meanwhile, sprinkle a clean wet cloth or pillow case with flour.
Roll the dough into an oblong shape and tie loosely in the cloth, leaving room for expansion of the dough.
Tie the ends firmly and stick a large safety pin in the center.
Place the dough in a steamer and steam 2 to 3 hours over boiling water.
