Jim Ackland's Grilled Cheese Sandwiches Recipe


Main Ingredient


 Sourdough bread/Cracked wheat /rye bread8 , sliced
 Butter stick1 (softened)
 Coarse mustard/Horseradish mustard1 Tablespoon
 Grated cheese/Or a combination2 Cup (32 tbs) (such as cheddar, Monterey jack, Swiss, Gouda)
 Ham slice/Turkey slices4
 Roasted green chilies1⁄4 Cup (4 tbs), chopped (canned)
 Thin tomato slices4 , cut in half
 Roasted red pepper strips8 (1 inch wide)
 Sauteed onion1⁄2 Cup (8 tbs) (about 1 small)
 Sauteed mushrooms1⁄4 Cup (4 tbs)


1. Heat a cast-iron skillet or griddle over a low flame. Butter one side of bread. Spread choice of mustard, horseradish, or other condiments on the other side. Layer on the cheese, ham, roasted chilies, tomato, roasted red pepper, onion, and mushrooms, then top with another slice of bread, buttered side out.
2. Lay 2 sandwiches at a time into the skillet, starting with the cheese side, and cook slowly until very crisp and golden brown, pressing occasionally with a spatula and turning only once. Allow to rest 5 minutes before cutting
