 1/2 teaspoon dried sweet basil leaves
 Ground cumin1/2 Teaspoon
 Oregano leaves1/2 Teaspoon, dried

 1/2 cup defatted chicken stock
 Lime juice2 Tablespoon
 Red wine vinegar2 Tablespoon

 Jicama1 1/2 Cup (16 tbs), diced
 2 serrano peppers, roasted, seeded, and medium diced,
 1 Anaheim pepper, roasted, seeded, and medium diced,
 1 poblano pepper, roasted, seeded, and medium diced,
 Leeks1/2 Cup (16 tbs), finley diced

Directions

Combine the 6 dry ingredients in a bowl, add the chicken stock, and stir.
Add the lime juice, wine vinegar, and lemon juice, and stir again.
Add the remaining ingredients and stir until thoroughly blended.
