Jeweled Minted Fruit Recipe
Ingredients
| Peaches | 2 , sliced | |
| Plums | 2 , quartered | |
| 1 cup red or green grapes, halved | ||
| 1 cup applejuice | ||
| Quick-cooking tapioca | 2 Tablespoon | |
| 1 tablespoon minced fresh mint or 1/2 teaspoon dried mint | ||
| Maple syrup | 1 Teaspoon | |
Directions
In a 1 1/2-quart casserole, combine the peaches, plums, grapes, juice, tapioca, mint, and maple syrup.
Cover with a lid and microwave on high for a total of 15 to 20 minutes, stirring twice during this time, until the tapioca is translucent and the fruit is tender.
Chill for at least 3 hours.
