Jewel Parfaits Recipe
Ingredients
| 2 envelopes unfavored gelatin | ||
| Cherry | 1 Bottle (1l) | |
| Lemon lime | 1 Bottle (1l) | |
| Lemon juice | 1 Tablespoon | |
| Green food coloring | ||
| 1 medium-size banana | ||
Directions
1. Soften 1 envelope of the unfavored gelatin in 1/2 cup of the cherry beverage in a small saucepan; heat over low heat, stirring constantly, just until gelatin dissolves; remove from heat. Stir in remaining cherry beverage.
2. Soften remaining envelope of gelatin in 1/2 cup of the lemon-lime beverage in a second small saucepan; heat over low heat, stirring constantly, just until gelatin dissolves; remove from heat. Stir in remaining beverage, lemon juice and food coloring to tint green. Chill both mixtures 30 minutes, or until as thick as unbeaten egg white, then keep at room temperature while layering therm in glasses.
3. Spoon 1/4 cup thickened cherry gelatin into each of 3 parfait glasses and 1/4 cup thickened lemon-lime gelatin into each of 3 other glasses; chill until firm.
4. Peel banana halfway and cut 6 slices; lay 1 slice on top of firm gelatin in each glass; spoon another 3 tablespoons gelatin mixture in each, alternating the colors with those in bottom; chill again until firm.
5. Peel and slice remaining banana; place in glasses; top with remaining gelatin mixtures, dividing evenly and alternating colors again; chill. Just before serving, garnish with more banana slices, if you wish.
