1/2 c lemon juice
 
2 t Szechwan chili sauce
 
1 T fresh parsley, minced
 
2 T vegetable oil
 
1 T paprika
 
1 T prepared mustard
 
4 boneless, skinless chicken breast halves
 
2 c long grain rice, cooked
 
2t fresh cilantro, finely chopped
 
2 T green onion, sliced
 
1 carrot, shredded nonfat cooking spray

Directions

Lightly coat the grill with the cooking spray and preheat for 5 minutes.
Combine the lemon juice, chili sauce, parsley, oil, paprika and mustard in a small bowl.
Place the chicken breasts in the grill and spoon the jerk sauce over each piece.
Grill for 5-7 minutes.
Watch the drip tray carefully, as the sauce will melt and run into the tray.Remove the chicken from the grill and kjeep warm.
In a large bowl, combine the rice, cilantro, green onion and carrot.
Coat the grill with cooking spray again and turn the rice onto the grill.
Drizzle the melted sauce over the rice and grill for 3-4 minutes.
To serve, arrange the rice on a large platter and top with the chicken breasts.
