Jerk Chicken Quesadillas With Cool Fruit Salsa Recipe
|Shredded cooked chicken||2 Cup (32 tbs)|
|Caribbean jerk seasoning||2 Tablespoon (Dried)|
|Shredded reduced fat cheddar cheese/Soy alternative||8 Ounce (2 Cups)|
|Whole wheat flour tortillas||4 (10 Inch Size)|
|Avocado||1 , pitted, peeled, and chopped|
|Canned mandarin oranges||11 Ounce, drained (1 Can)|
|Raspberry wine vinegar||2 Tablespoon|
|Grated lime peel||1⁄2 Teaspoon|

In a medium bowl, combine the chicken and jerk seasoning and toss until evenly coated.
Spread 1/4 cup of the cheese over half of each tortilla, then top with 1/2 cup of the chicken.
Top each again with 1/4 cup cheese, then fold each tortilla in half.
Place the tortillas on a baking sheet and bake for 10 minutes, or until the tortillas are crisp and the cheese is melted.
Meanwhile, in a medium bowl, combine the avocado, oranges, vinegar, lime peel, and salt and toss until evenly coated.
Cut each quesadilla in half.
