Jelly Rolls Recipe

Ingredients

 
Cake:
 
4 eggs, separated, plus 2 egg yolks
 
Grated peel of 1 lemon
 
1/2 cup (100 g) sugar
 
3/4 cup (75 g) all-purpose flour
 
1/2 teaspoon baking powder
 
Filling & Topping:
 
3/4 cup (250 g) apricot jam
 
Powdered sugar
 
6 candied cherries

Directions

Line a 13x9-inch (33x23-cm) cake pan with waxed paper; grease paper.
Preheat oven to 425°F (220°C).
To make cake, put 6 yolks, lemon peel and half the sugar into a large bowl.
Beat until pale and creamy, 5 to 10 minutes with an electric mixer.
Beat whites until stiff; beat in remaining sugar.
Fold egg white mixture into egg yolk mixture.
Sift flour with baking powder.
Fold into egg mixture.
Spread batter evenly in prepared cake pan.
Bake 10 to 12 minutes or until a wooden pick inserted in center comes out clean.
Leave in pan covered with a damp cloth towel until cooled.
Turn out cooled cake onto a clean work surface.
Peel off lining paper.
Trim cake edges.
To complete rolls, spread apricot jam over cake.
Cut into 12 squares and roll up each square with apricot jam inside.
Sift powdered sugar over rolls.
Decorate each roll with half a candied cherry.
