Jellied Tongue Mold Recipe

Ingredients

 
1 env. Unflavored gelatin
 
1 10 1/2-oz. can consomme
 
2 tbsp. lemon juice
 
I/2 c. diced cooked tongue
 
1/2c. minced cucumber
 
1/4 c. sliced celery
 
2 tbsp. sliced stuffed olives
 
3 slices tongue
 
4 cucumber slices

Directions

Sprinkle gelatin on 1/2 cup cold water to soften.
Place over low heat, stirring until dissolved.
Remove from heat; blend in consomme and lemon juice.
Chill until slightly thickened.
Fold in diced tongue, cucumber, celery and olives.
Arrange tongue and cucumber slices in bottom of loaf pan; pour gelatin mixture over slices.
Chill until firm.
Unmold on lettuce-lined serving platter.
