1 1/2 tbsp. unflavored gelatin
 
1/4 c. water
 
1 c. meat or poultry broth or consomme, heated
 
1 tbsp. chopped onion Salt to taste
 
1 tbsp. vinegar or lemon juice
 
1 c. chopped cooked meat or poultry
 
1 c. cooked peas
 
2 tbsp. chopped celery
 
2 tbsp. sliced cucumber pickle

Directions

Soften gelatin in cold water; dissolve in hot broth.
Add onion, salt, vinegar or lemon juice and other seasonings to taste.
Chill until thickened.
Stir in meat, peas, celery and pickle.
Pour into individual molds; chill until firm.
Serve on lettuce.
