Ingredients

 
1 1 lb. can julienne beets
 
1 pkg. raspberry gelatin
 
2/3 c. orange juice
 
Salt
 
2 tbsp. vinegar
 
2 tsp. grated onion
 
1 tbsp. horseradish
 
1/2 c. shredded carrots
 
1/2 c. finely diced celery

Directions

Drain beets, reserving 1 cup juice.
Dissolve gelatin in beet juice.
Add orange juice, salt, vinegar, onion and horseradish.
Cool until slightly thick; add vegetables.
Pour into mold.
Chill until firm.
