4 beets
1 small onion
1 X 3-oz package raspberry gelatin dessert
1 cup white vinegar
1 cup water
Directions
Cook the beets, cool and rub off the skins.
Chop coarsely .
Chop the onion finely .
Mix the beets and onion together in a bowl.
Prepare the gelatin dessert by dissolving the gelatin in boiling vinegar then adding cold water.
Pour over the beets.
Leave until set and then break up lightly with a fork.
