Jellied Beet Consomme Recipe

Ingredients
Beet Consomme
2 envelopes unflavored gelatin
1/4 cup cold water 50 mL
1/2 cup lightly salted whipped cream 125 mL
Chopped fresh tarragon or parsley
Directions
Follow recipe for Beet Consomme up to and including straining juices from beet mixture.
Sprinkle gelatin over cold water and let stand for 5 minutes to soften.
Stir a few spoonfuls of hot soup into gelatin, stirring to dissolve gelatin completely, then pour gelatin mixture into soup.
Let cool and refrigerate for at least 3 hours or until set.
To serve, spoon into small chilled glass bowls and garnish with whipped cream and a sprinkling of tarragon.
