Jellied Chicken Recipe
Ingredients
1 envelope unflavored gelatin (1 tbsp.)
1 3/4 cups chicken broth
2 cups cut-up cooked chicken
2 tbsp. lemon juice
1/4 cup chopped celery
2 tbsp. sliced pimiento-stuffed green olives
1 tbsp. minced onion
1/2 tsp. salt pimiento tomato wedges
Directions
Soften gelatin in 1/2 cup cold broth.
Heat and stir over low heat until gelatin dissolves.
Stir in remaining broth.
Chill until partially set.
Mix remaining ingredients except pimiento and tomato wedges; fold into gelatin.
Pour into 9x5x3" loaf pan or 1-qt. refrigerator tray.
Chill until set.
Unmold on chilled platter.
