Jellied Broccoli Ring Recipe
Ingredients
3 oz lemon jelly powder
1 1/4 cups boiling water
3 tbsp vinegar
2 tsp sugar
3 tbsp commercial Italian dressing
1 1/2 cups broccoli florets
1/4 cup celery, finely chopped
2 tbsp onion, finely chopped
Salt, pepper and paprika
Lettuce leaves
1 tomato, quartered
Directions
In a bowl, dissolve jelly powder in boiling water.
Let cool.
Add vinegar, sugar and dressing.
Stirring occasionally, refrigerate until jelly sets to an egg white consistency.
Add broccoli, celery, onion, salt, pepper and paprika.
In a ring mold oiled, then rinsed under cold water, pour mixture.
Refrigerate around 2 hours or until mixture has set.
Unmold on a bed of lettuce.
Garnish with tomato wedges.
