3 env. unflavored gelatin
 
1/2 cup cold water
 
1 3/4oz. low-calorie jelly pectin
 
11/2 cup water
 
1 tsp liquid sugar replacement
 
1 1/2 tsp lemon juice
 
1 tsp fruit oil Or 2 tsp fruit flavoring food color flour or cornstarch

Directions

Combine gelatin and 54 cup (125 mL) cold water in bowl, stirring to mix, and set aside.
Combine pectin and 1 1/2 cup (375 mL) water in saucepan; cook and stir over medium-high heat until boiling.
Cook and stir 12 minutes longer and then remove from heat.
Add soaked gelatin, stirring until gelatin completely dissolves.
Add sugar replacement, lemon juice, fruit oil and food color; stir to mix.
Using teaspoon, fill holes in prepared pan with this mixture.
Allow to set completely.
Remove jots to strainer; shake off excess flour or cornstarch. (Mixture becomes hard, reheat slightly to liquefy.) To prepare pan: Half fill 13 x 9 x 2 in. (33 x 23 x 5 cm) pan with flour or cornstarch.
Place a thimble on finger and make holes in flour to bottom of pan.
