Jardiniere Recipe
Ingredients
1 pound sweet green peppers, cut into strips
12 ounces zucchini, sliced
8 ounces carrots, cut into sticks
1 1/4 pounds onions, sliced
3 2/3 cups sliced celery
4 banana peppers, cut into strips
8 ounces mushrooms, sliced
1 quart cider vinegar
1 1/2 cups water
1 cup sugar
2 tablespoons mixed pickling spice
1 teaspoon oregano
2 teaspoons basil
1 teaspoon peppercorns
1 clove garlic, minced
1 teaspoon salt
Directions
Prepare vegetables; set aside.
Combine vinegar, water, sugar and spices in a large sauce pot.
Bring to a boil; reduce heat to a simmer.
Add vegetables and simmer until just tender.
Pack hot vegetables into hot jars, leaving 1/4 inch head space.
Pour hot pickling liquid over vegetables, leaving 1/4 inch head space.
Remove air bubbles.
Adjust caps.
Process 20 minutes in boiling water bath.
Combine vinegar, water, sugar and spices in a large sauce pot.
Bring to a boil; reduce heat to a simmer.
Add vegetables and simmer until just tender.
Pack hot vegetables into hot jars, leaving 1/4 inch head space.
Pour hot pickling liquid over vegetables, leaving 1/4 inch head space.
Remove air bubbles.
Adjust caps.
Process 20 minutes in boiling water bath.
