Japanese Fried Chicken Recipe

Ingredients
2 1/2 to 3 pounds fryer, cut into pieces
Marinade
4 tablespoons soy sauce
2 teaspoons mirin or sherry
Juice of 1 lemon
Salt
Paprika
4 tablespoons (approximately)
Cornstarch
Oil for frying
Directions
After cutting up chicken, wash and pat it dry.
Mix together soy sauce, mirin (if substituting sherry, add 1 teaspoon sugar), lemon juice, dash of salt, and dash of paprika.
Marinate chicken pieces in marinade for at least 2 hours; drain off excess liquid.
Sprinkle chicken thoroughly with cornstarch.
Fry in oil on medium temperature for about 15 to 20 minutes, or until chicken is nicely browned.
Drain on paper towels.
