Japanese Sweet Pickles Recipe

2 lbs. Diakon (white Japanese radish)
1 cup sugar
1/4 cup white vinegar
1 cup water
3 tbs. Salt
3 drops yellow food coloring
Directions
Wash daikon and peel; slice very thin.
Combine remaining ingredients in a sauce pan and bring to a boil.
Place daikon slices in 2-quart jar and pour over hot liquid.
Cool to room temperature and cover.
Refrigerate at least 3 days before serving.
