Jambalaya Recipe
Jambalaya is a cooked southern speciality made with vegetables, meat and rice. This jimbalaya is made with cooked ham and shrimp along with tomatoes. Herbed with thyme, this ham and shrimp jimbalaya is flavored with a hint of garlic and simmered to a moist and delicious finish.
Ingredients
2 cloves garlic, crushed
1 tablespoon Margarine
1 (14 1/2-ounce) can stewed tomatoes, undrained and coarsely chopped
1 1/2 cups cubed cooked ham
1 (13 3/4-fluid ounce) can Chicken Broth
1 cup uncooked rice
1/2 teaspoon dried thyme leaves
12 ounces shrimp, shelled and deveined
Directions
In skillet, over medium-high heat, cook garlic in margarine for 1 to 2 minutes.
Add remaining ingredients except shrimp; heat to a boil; reduce heat.
Cover; simmer 25 minutes.
Add shrimp; cook, covered, 5 to 10 minutes or until liquid is absorbed.
