Fruited Rice Recipe
A tasty rice recipe that adds a sweet, vegetarian compliment to spicy dishes

Ingredients
1 tablespoon vegetable oil
1/2 large onion, sliced
1/2 red apple, cored and sliced
1 pinch curry powder
1 cup water
2/3 cup brown rice
1 teaspoon dark molasses or treacle
1 small banana, sliced
1 tablespoon unsweetened flaked coconut
Directions
Heat the oil in a saucepan over medium heat. Add the onion and red apple; cook and stir until onion is transparent. Season with curry powder, and stir in the water. Add the rice and molasses, cover, and cook over low heat until the rice is tender, and water has been absorbed, about 30 minutes. Mix in the banana, then sprinkle the coconut on top. Heat through for a moment over low heat before serving.

My goodness how did this recipe become Jamaican Rice & Peas? This variation may be very tasty, but I think you should change the title, and remove the word Jamaican. Jamaicans do vary the recipe for Rice and Peas, but never, ever have I seen any Jamaican chef or domestic cook prepare Rice & Peas with these ingredients. It's really misrepresenting the original dish.

That is not how you cook Jamaican Rice&Peas.
INGREDIENTS:
1 can of coconut milk/a whole coconut
2)1/2 cup of red kidney beans:can/bag
3)3 cups of rice
4)2tbsp salt
5)3 cups water
6)2 roots escallion
7)tsp thyme
8)1 whole green hot pepper
9)slice of green sweet(bell)pepper
Grater coconut and blend(if not using can milk).Put the juice in pot and bring to boil. Add beans and let cook until tender. Pour water in pot if water boils out during cooking.Add salt,escallion.thyme,and peppers.Let seasonings cook for 10-15mins. Add rice to mixture then cover and turn flame down to low. Let it slow cook until rice is cooked to your preference.
