Directions

Step1. Mix chopped sweet potato and cream. Blend it in a blender to smooth the mixture.
Step2. Pour mixture into a large bowl and add the other ingredients.
Step3. Pour mixture into large loaf pans.
Step4. Bake for 1 1/2 hours at 350 degrees.

Yes, it's coconut milk that goes in the pudding. When I was little I tried the grated coconut thing and it tasted more like coconut pudding than potato. Oh, and yes a Jam Dung mi born an' grow ;)

i was taught that u peel the potato then grate it, grate the coconut don't juice it, with flour, sugar, yam, vanilla, nutmeg, cinnamon power, butter, salt with a little water. this is the country style of making potato pudding.

The best way to make this is to grate the potato, grate the coconut and use the juice, use brown sugar, you can grate some yellow yam into this or add cornmeal to give it a little extra flavor, that was how I was taught. (Some people like to add raisins but I am not a fan of raisin) add cinamon, vanilla and nutmeg...you need those spice to give it a little extra something. Good luck
