Ingredients

 Ripe mango1 , peeled
 Ripe tomatoes – 2 large, seeded and diced
 Scotch bonnet -1, seeds and ribs removed and minced, or more to taste or habanero chili -1, seeds and ribs removed and minced, or more to taste
 Golden Raisins1/2 Cup (16 tbs)
 Shallots4
 Ginger1 Tablespoon, peeled
 Allspice2 Teaspoon
 Salt1/2 Teaspoon
 Cinnamon1/2 Teaspoon
 Cloves1/4 Teaspoon
 Dark brown sugar1/2 Cup (16 tbs)
 Sugar - 1/2 cup, granulated
 Red wine vinegar1/2 Cup (16 tbs)

Directions

MAKING
1. In a heavy saucepan, take all ingredients and mix.
2. Cook over low heat with occasional stirring for about 1 hour until the sauce is thick and rich.

FINALISING
3. Cover and refrigerate.

SERVING
4. Serve as condiment.
