Jamaican Pepper Sauce Recipe
Ingredients
| Ripe mango | 1 , peeled | |
| Ripe tomatoes – 2 large, seeded and diced | ||
| Scotch bonnet -1, seeds and ribs removed and minced, or more to taste or habanero chili -1, seeds and ribs removed and minced, or more to taste | ||
| Golden Raisins | 1/2 Cup (16 tbs) | |
| Shallots | 4 | |
| Ginger | 1 Tablespoon, peeled | |
| Allspice | 2 Teaspoon | |
| Salt | 1/2 Teaspoon | |
| Cinnamon | 1/2 Teaspoon | |
| Cloves | 1/4 Teaspoon | |
| Dark brown sugar | 1/2 Cup (16 tbs) | |
| Sugar - 1/2 cup, granulated | ||
| Red wine vinegar | 1/2 Cup (16 tbs) | |
Directions
MAKING
1. In a heavy saucepan, take all ingredients and mix.
2. Cook over low heat with occasional stirring for about 1 hour until the sauce is thick and rich.
FINALISING
3. Cover and refrigerate.
SERVING
4. Serve as condiment.
