Jamaican Curried Mutton Recipe
Ingredients
| 2 pounds boneless mutton | ||
| Salt | 1 Teaspoon | |
| Pepper | 1 Teaspoon | |
| Onion | 1 , minced | |
| Curry powder | 3 Teaspoon | |
| Cooking oil | 2 Tablespoon | |
| Water | 1 1/2 Cup (16 tbs) | |
| Potatoes | 2 Medium, peeled | |
| Hot cooked rice | ||
Directions
Wipe meat with a damp paper towel and cut into 1-inch pieces.
Season with the salt and pepper, and rub in onion and curry powder.
Let stand for 1 hour.
Heat oil, add meat, and brown on all sides.
Add the water, cover, bring to boil, and simmer until meat is tender, about 1 hour.
Add potato and cook, covered, until very soft and mixture is slightly thickened.
Serve on hot rice, accompanied by chutney.
