Jamaican Banana Spice Cake Recipe
Ingredients
| Butter/Margarine | 1 Cup (16 tbs) | |
| Sugar | 1 Cup (16 tbs) | |
| Eggs | 3 , Well beaten | |
| Flour | 1/2 Cup (16 tbs) | |
| Baking powder | 1/4 Teaspoon | |
| Baking soda | 1/4 Teaspoon | |
| Dairy sour cream | 1 Cup (16 tbs) | |
| Vanilla | 3 Teaspoon | |
| Rum | 1 Tablespoon | |
| Pumpkin pie spice | 1 Teaspoon | |
| Ripe bananas | 1 Cup (16 tbs) |
Directions
Cream together butter and sugar until light and fluffy.
Add eggs.
Sift flour twice, then resift with baking powder and soda.
Add to butter mixture alternately with sour cream.
Stir in vanilla, rum, spices, and bananas by hand using a wooden spoon.
Pour into a greased 9x13 inch pan.
Bake in a preheated 350 degree oven for 45 minutes or until done.
When cake has cooled, brush with 3 tablespoons rum or wine.
Frost with a butter icing.
