Jamaica-Style Pimiento Rice Recipe
Ingredients
1/2 onion diced
1/2 green pepper diced
1 clove garlic
4 tablespoons salad oil
1 1/2 cups precooked packaged rice
1 1/2 cups tomato juice
1 small can (4 ounces) pimientos diced (reserve liquid)
1 teaspoon salt, Black pepper
1 can (6 ounces) mushrooms and their liquid if desired, Diced green or black olives if desired
Directions
Saute onion, pepper, and garlic clove (mash it up) in oil in a large skillet until onion is transparent.
Add rice, tomato juice, pimientos and their liquid, salt, and a generous dash of pepper (or grind of a pepper mill).
Bring to boil, turn off heat, and let rice stand till all liquid is absorbed, about 5 minutes.
Fluff rice.
Add mushrooms and their liquid, if desired, or garnish with olives.
Serve hot.
