Ingredients

 
115 grams (4oz.) self-raising flour
 
55 grams (2 oz.) margarine or butter
 
55 grams (2 oz.) powdered sugar
 
25 grams (1 oz.) cornflour, a pinch salt, a little milk, jam (preferably raspberry)

Directions

1. Sieve the flour, salt and cornflour together.
2. Rub in the margarine with fingertips.
3. Add the sugar and mix well.
4. Add just enough milk to make a dough.
5. Roll out the dough into about 6 mm. (1") thickness.
6. Cut with a round biscuit cutter.
7. In every alternate biscuit, make a hole in the centre with about 12 mm. (1/2) nozzle.
8. Grease and dust a baking tin and arrange the biscuits in it.
9. Bake in a moderate oven at 350°F. for 25 minutes.
10. Shake the biscuits immediately when they are cooked.
11. Cool the biscuits.
12. Make pairs of one biscuit with hole and one without and sandwich with jam.
