Add the salt and water and beat until well mixed.
Put the jam, brandy, walnuts and raisins in a saucepan and warm gently over low heat.
Meanwhile, melt a quarter of the butter in an omelet pan.
Add a quarter of the egg mixture and cook, lifting the edges of the omelet to allow the liquid egg mixture to run on to the pan.
When the omelet is set, slide it on to a warmed plate.
Keep warm while you cook the remaining omelets in the same way.
Spread the omelets with the jam mixture.
Roll them up and serve hot, sprinkled with confectioners' sugar.
