Jam and Coconut Muffins Recipe
Ingredients
| Plain flour | 10 Ounce | |
| Egg | 1 | |
| Bread | 2 Teaspoon | |
| Buttermilk | 1/2 Pint | |
| Caster sugar | 4 Ounce | |
| Vegetable oil | 6 Tablespoon | |
| Coconut | 4 Ounce | |
| Jam | 3 Tablespoon |
Directions
GETTING READY
1 Preheat the oven 400 degrees farenheit (200°C/Gas 6).
2 Grease a 12 hole muffin tin.
MAKING
3 In a large bowl, sift flour and raising agent .
4 Stir in sugar and coconut.
5 Beat the egg, milk and oil together.
6 Stir into the flour mixture.
7 Place a large tablespoon of mixture into each muffin tin.
8 Put a teaspoon jam in the centre and then spoon more mixture on top until the tin is two-thirds full.
9 Bake for 25-30 minutes until well risen and firm to touch.
SERVING
10 Serve as a tea time snack or with breakfast.
