Jalapeno Rice Casserole Recipe

Ingredients
2 1/2 cups water
1/2 teaspoon chicken-flavored bouillon granules
1 cup parboiled rice, uncooked
1/2 cup plain low-fat yogurt
2 tablespoons reduced-calorie creamy Italian salad dressing
1 jalapeno pepper, seeded and chopped
1 tablespoon chopped fresh parsley
Vegetable cooking spray
1/3 cup (1 1/3 ounces) shredded Monterey Jack cheese
Directions
Combine water and bouillon granules in a medium saucepan; bring to a boil.
Stir in rice.
Cover; reduce heat, and simmer 25 minutes or until liquid is absorbed.
Remove from heat; stir in yogurt, salad dressing, pepper, and parsley.
Spoon into a 1-quart baking dish coated with cooking spray.
Bake, uncovered, at 350° for 20 minutes.
Top with cheese, bake 5 minutes.
