Jalapeno Tilapia with Whole Wheat Linguini and Lemon Butter Recipe Video

I use fresh Jalapenos from our pepper garden and whole wheat linguini.

Recipe Story

This is my favorite fish recipe from Johnny Carino's! Every time we eat at Johnny Carino's I order this dish. I was so excited to find the recipe and add it to my Real Texas Recipes.

Ingredients

 
3 – 4 (4 ounce) Tilapia fillets
 
1 1/2 cups All-Purpose White Flour
 
3/4 cup Butter, melted
 
3 teaspoons Garlic, minced
 
3/4 cup Jalapeno, minced
 
3 cups fresh Spinach, de-stemmed
 
3 pinches Salt
 
3 pinches Pepper
 
3 pinches Garlic Salt
 
1 1/2 cups heavy Cream
 
3/4 cup Lemon Butter
 
15 ounces Linguini
 
3 teaspoons fresh Parsley
 
1/2 cup diced Roma Tomato
 
1/2 cup Butter
 
1 1/2 tablespoons Lemon Juice
 
1 1/2 tablespoons Parsley, chopped
 
3/4 teaspoon Salt
 
1/4 teaspoon Cayenne Pepper

Directions

Dredge the Tilapia fillets in the flour.

In a heavy bottom skillet, melt the butter and add the garlic. Add the Tilapia and cook over medium heat. Once the Tilapia has finished cooking on one side, flip the fillets over, sprinkle the fillets with the salt, pepper and garlic salt.

Add the Jalapenos, and spinach.

Prepare the linguini in boiling water, and allow it to cook for 3 to 5 minutes depending on how you like the doneness of your linguini.

As the fillets begin to flake, add the heavy cream and bring to a slight boil. Add the lemon butter and parsley to the sauce and stir.

Place the linguini on a plate and place a fillet on top and spoon some of the sauce and spinach over the linguini.

Garnish with Roma tomatoes and fresh grated Parmesan Cheese.

In a small saucepan over medium heat, melt butter. Stir in lemon juice, chopped parsley, aslt and cayenne pepper. Set aside.
