Jackson Wonder Beans & Pork Recipe

Made this Jackson Wonder Beans & Pork for my husband and he loved it! I added Fresh sage to this Jackson Wonder Beans & Pork recipe for more flavor. I used Jackson Wonder Beans here but I am sure you can try out your own variations too!

Ingredients

 
8-oz pkg Dried Jackson Wonder Beans
 
1 tbs (15 ml) vegetable oil
 
1 lb (455 g) lean boneless pork, cut into 1-inch cubes
 
1 cup (240 ml) chopped onion
 
2 cloves garlic
 
2 3/4-2 3/4 cups (590-660 ml) water or broth
 
1 1/2 cups (355 ml) diced carrots
 
1 1/2 tbs (25 ml) minced Fresh Sage, Rosemary or Oregano
 
1/2 tsp (3 ml) salt
 
1/4 tsp (1 ml) pepper

Directions

Cover beans with water in a large saucepan and bring to a boil.
Boil 2 minutes; remove from heat.
Cover; let stand 1 hour.
Drain beans and set aside.
In same saucepan heat oil; saute pork with onion and garlic until meat is browned and vegetables are tender.
Stir in broth, beans, carrots and herbs.
Bring to a boil; reduce heat.
Simmer, covered, for 1-1 1/2 hours, or until meat and beans are tender.
Stir in salt and pepper.
