Jacket Potatoes Recipe

4 large potatoes about 1/2 lb each scrubbed clean and pricked
2 tablespoons cottage cheese
1/2 cup grated Cheddar cheese
1 canned pineapple ring, chopped
Salt and pepper
Directions
1 Arrange the potatoes in a ring on a large dinner plate.
2 Microwave on full power for 17 minutes, turning the potatoes over once, half way through cooking.
3 Remove from microwave and stand, covered with a clean tea (dish) towel, for 10 minutes.
4 Mix the cottage cheese, Cheddar cheese, pineapple, salt and pepper.
5 Mark a cross in the top of each potato, and push up from the base to open the potato to form a waterlily shape.
6 Divide the filling between each potato.
