Ingredients

 1 (9-inch) ready-prepared reduced-fat graham cracker crust
 2 cups peeled, thinly sliced sweet potatoes or yams
 1 navel orange, peeled, sliced into thin rounds, then cut into small pieces
 Golden brown sugar1 Tablespoon
 Orange juice1/3 Cup (16 tbs)
 Pumpkin pie spice1/4 Teaspoon
 Pinch each ground cinnamon and ground nutmeg
 Maple syrup1 Tablespoon
 1 tablespoon light butter

Directions

1. Preheat oven to 425°. Cover bottom of pie crust with single overlapping layer of potatoes. Top with layer of orange pieces. Repeat layers, ending with potatoes.
2. In small bowl stir sugar into orange juice. Pour over top of potatoes. Sprinkle with spices. Cover.
3. Bake 1 hour. Uncover. Drizzle maple syrup over top. Dot with butter. Bake 15 minutes more or until top is golden brown and potatoes are tender.
