It'S Not Dessert Scalloped Sweet Potatoes Recipe
Ingredients
| 1 (9-inch) ready-prepared reduced-fat graham cracker crust | ||
| 2 cups peeled, thinly sliced sweet potatoes or yams | ||
| 1 navel orange, peeled, sliced into thin rounds, then cut into small pieces | ||
| Golden brown sugar | 1 Tablespoon | |
| Orange juice | 1/3 Cup (16 tbs) | |
| Pumpkin pie spice | 1/4 Teaspoon | |
| Pinch each ground cinnamon and ground nutmeg | ||
| Maple syrup | 1 Tablespoon | |
| 1 tablespoon light butter | ||
Directions
1. Preheat oven to 425°. Cover bottom of pie crust with single overlapping layer of potatoes. Top with layer of orange pieces. Repeat layers, ending with potatoes.
2. In small bowl stir sugar into orange juice. Pour over top of potatoes. Sprinkle with spices. Cover.
3. Bake 1 hour. Uncover. Drizzle maple syrup over top. Dot with butter. Bake 15 minutes more or until top is golden brown and potatoes are tender.
