Ingredients

 
1 lb. yellow squash
 
1 T parsley, finely minced
 
1 T Italian seasoning
 
1/2 t oregano
 
2 T olive oil
 
1 T balsamic vinegar
 
1/2 t black pepper nonfat cooking spray

Directions

Clean the squash and cut into slices 1/4 inch thick.
In a small bowl, mix together the parsley, Italian seasoning, oregano, olive oil, vinegar and pepper.
Lightly coat the grill with cooking spray and preheat for 5 minutes.
Place the squash in the grill, overlapping the slices, and cook for 6-8 minutes.
In a serving bowl, lightly toss the squash with the Italian dressing and serve immediately.
