Italian Veal Con Riso Recipe

Ingredients

 
6 (1 1/4 lbs.) pre-breaded veal cutlets
 
1/4 lb. Italian sausage, sliced
 
1/4 c oil
 
2 c cooked rice
 
1 can (10 1/2 oz.) minestrone soup
 
1 soup can water
 
2 cans (4 oz. each) tomato paste
 
1/4 c grated Parmesan cheese
 
2 t instant minced onion
 
2 t dry parsley flakes

Directions

In a fancy skillet, brown and cook veal and sausage in oil until done.
Transfer to a paper plate temporarily.
Combine remaining ingredients, stirring to blend.
Tuck veal pieces into this mixture.
Decorate each cudet with a sausage slice.
Cover and heat for 5 more minutes.
