1 tablespoon margarine
 
1 teaspoon cornstarch
 
1/2 teaspoon Italian herb seasoning
 
1/4 cup chicken broth
 
1 whole chicken breast (about 1 pound), skinned, boned, and split
 
1 medium tomato, coarsely chopped
 
1 tablespoon chopped fresh parsley

Directions

Combine margarine, cornstarch, Italian sea-soning, and chicken broth in 1-cup glass measure.
Stirwell.
Cook on HI, 1 minute.
Set aside.
Roll up chicken breasts and place, seam-side down, in 1-quart microproof casserole.
Cover with tomatoes and sprinkle with parsley.
Pour broth mixture over chicken.
Cover with casserole lid and cook on 50, 4 minutes.
Baste.
Cover and cook on 70, 6 minutes.
