Italian Stuffed Yellow Squash Recipe

3 large yellow squash
 
1/4 pound hot bulk pork sausage
 
1/3 cup chopped onion
 
1/2 cup chopped green pepper
 
1/2 cup chopped tomato
 
1/2 cup grated Parmesan cheese
 
3/4 cup (3 ounces) shredded mozzarella cheese

Directions

Cut squash in half lengthwise, scoop out pulp and seeds, leaving a 1/4-inch shell.
Set squash shells aside.
Cook sausage, onion, and green pepper in a skillet over medium-high heat until sausage is browned, drain well.
Stir in tomato and Parmesan cheese.
Spoon mixture into squash shells, place squash in a shallow dish.
Bake, uncovered, at 350° for 20 minutes.
Sprinkle with mozzarella, bake an additional 5 minutes or until cheese melts.
