Ingredients

 
2 peppers (any color of your choice) – slit in half and seeds scooped out
 
3 tbsp oil
 
¼ cup chopped celery
 
¼ cup chopped onions
 
1 lb finely chopped mushrooms
 
4 cloves chopped garlic
 
½ cup breadcrumbs
 
¼ cup grated parmesan cheese
 
¼ cup ketchup
 
Dried basil
 
Chopped black olives (optional)
 
1 cup mozaraella

Directions

Place the sliced and deseeded peppers in a shallow baking dish.
Take a skillet and add the oil. Add the chopped celery and onions and sauté. Add the finely chopped mushrooms. Saute till mushrooms start to brown. Add the chopped garlic, breadcrumbs, grated parmesan and ketchup. Add the dried basil (can also add chopped black olives). Add half the mozaraella. Fill this mixture into the peppers. Cook for 15-18 minutes in the oven or till peppers are tender. Take out and sprinkle with the remaining mozaraella. Put back into the oven for 1-2 minutes. Enjoy!!
